To test the edge of a knife, hold it at about 30~ from perpendicular (the edge should be facing away from you). Press down on the blade with one hand while holding it at an angle with another. If the knife feels like it's sticking to your hand and isn't moving at all, then there is no bending in the blade. If it moves back and forth easily, there is still some bending in the blade as well as some flexing
If you find that your knife doesn't have enough flex for comfortable use, then use sandpaper to remove some of that flex until it does have enough bend for use.
